Freeze drying is not an invention of the modern age. The Incas already knew about the gentle effect of cool temperatures in the Andes in combination with high air pressure and warm sunlight during the day.
Centuries ago, they dried potatoes in a natural way to preserve them. The same principle is still used today to freeze dry our ingredients. The only difference is that we use state-of-the-art freeze drying equipment in which we carefully recreate the natural environmental conditions. The result is 100% natural ingredients, without preservatives, but with full flavour.
