Wild Garlic

Allium Ursinum

Also known as Ransoms, this is a wild relative of Chives, usually found in deciduous woodlands. Although having a distinct characteristic garlic flavour and aroma, it has the great advantage that the after-taste lasts for a much shorter period than that of garlic cloves. Wild Garlic can be used as an alternative to Basil in a Pesto, to flavour soups, sauces, and dips, and for many of the dishes where Garlic is traditionally used.
